Ingredients

  • 1 4-5 POUND CENTER CUT BONE-IN PORK ROAST

  • 1 TABLESPOON DRIED OREGANO

  • 1 TEASPOON BLACK PEPPER

  • 1 TEASPOON GROUND CUMIN

  • 2 TEASPOONS DRIED SAGE

  • 1 TEASPOON DRIED ROSEMARY

  • 8-10 GARLIC CLOVES MINCED

  • 1/2 CUP SOUR ORANGE JUICE (IF FRESH SOUR ORANGES UNAVAILABLE, COMMERCIALLY MADE JUICE IS AVAILABLE AT LATINO GROCERS)

  • 1/4 CUP OLIVE OIL

  • SALT TO TASTE

Directions

  • Pre-heat oven at 400ºF.
  • Combine all ingredients for the rub.
  • Pierce the meat with a sharp knife 3 or 4 times. Season the meat with the rub, making sure some of it goes inside the perforations.
  • Place meat on a baking dish and cover loosely with foil.
  • Roast for about 15 minutes and immediately after lower the heat to 375ºF.
  • Roast for about 1½ hours.
  • Remove foil and put under the broiler for 3-5 minutes.
  • Take roast out of the oven; let it rest for about 10 minutes before serving.

Notes

  • A variety of vegetables can be added to the roast half way thru the roasting time.
